Like I mentioned before, I get to travel a lot with my Martial Arts Master, Great Grandmaster Tae Yun Kim. And most of the time, there is very little time to prepare for the trip. By the time I have all the filming gear together and thrown clothes personal stuff in a suitcase, I barely have time to jump in the car and make in time to the airport!
But more about “gluten-free travel” will come later, on Shirley’s blog – because guess what! She invited me to do a guest blog over at “Gluten free-easily!!!” What an honor!
So here, I will tell you that if you are gluten-free, you will need to pack snacks. Lots of them. Of course, I love to make healthy treats and love to offer them to Great Grandmaster! And since I always travel with fellow Jung Suwon warriors, who like to eat what I make, lots means LOTS! 🙂
So I wanted my snacks to be very healthy, to be easy to prepare, and not have a long list of complicated ingredients. And something to that I can put together really fast. That’s a lot to ask for but I found this amazing recipe on Shirley’s site: http://glutenfreeeasily.com/gluten-free-dairy-free-refined-sugar-free-chewy-granola-bars/
The first time I made these bars, I made them exactly as in the recipe, and they were life savers on that trip, and unbelievably delicious. The second time – and the photos are from that second batch, I added sunflower seed and pistachio nuts, and I cut back the sugar a little and added some ground up dates. Really really good too!
The third time, a young Jung Suwon warrior wanted to learn to bake and she put together a pan of these, adding about a cupful of cut up apples – and that version was divine! They were incredibly moist and delicious and gone in the blink of an eye. Of course, the version with apple wouldn’t keep as long on a trip, but it’s tasty for sure!
And I’ll leave you with one of Great Grandmaster Tae Yun Kim’s powerful sayings. It may not have anything directly to do with this post, but I wanted to share on of my very favorite quotes:
“No matter who you are, no matter where you are, no matter what obstacles and limitations exist around you at this moment, you can change your life, your health, and your state of mind completely. You can decide who you want to become.”
